Larger Sized Mannequins

I'm working on a personal museum in which one room is filled with mannequins adorned in warrior's outfits throughout the ages. I want my center-piece to be a Roman cavalryman, but I don't know what to do for the horse.

I'd greatly prefer a fake horse, but if it's necessary, how would I get a taxidermic horse? (without buying a live one and it "dying")

is there a specific artist that can make a realistic, lightweight horse complete with fur, glass eyes, all that jazz?

All these places beginning to make plus size clothing the "norm" and plus size mannequins? The government keeps saying how they need to put a lid on the amount of obesity in the USA but then they allow this stuff which makes it seem like anyone who is skinny at all is the outcast!! I am not saying that people who are larger are bad people or that skinny people are any better i am just not understanding why large is becomming the new Small???
